Bran & Fruit Muffins



Bran & Fruit Muffins  
2C "All Bran"
½ C Apple Juice
3 oz Apple juice concentrate
2 Eggs
1 ¼ C Non-fat Milk
Scant 1/4 C Olive oil
1 15-oz Can Pumpkin puree
2 Large Ripe Bananas, mashed
¾ C Raisins
1 C Chopped nuts
1 ½ C WW Flour
1 C Oat bran
1 C Dry oats
2 ½ tsp Baking soda
3 tsp Baking powder
3 tsp Cinnamon
½ tsp Cloves
1 tsp. Ginger
1 C Blueberries (fresh or frozen)
Combine All Bran with apple juice & apple juice concentrate, mix to moisten evenly. Add eggs, milk, oil, pumpkin, bananas, raisins & nuts, mix well.
In another bowl combine flour, oat bran, oats, baking soda, baking powder, cinnamon, cloves & ginger. Add to bran mixture & mix well. Fold in blueberries.
Bake at 350 for 23 min (17 min for mini muffins)
Makes 24 large muffins or 60 mini muffins.
